Applewood smoked bacon lardons, shallot, heavy cream, mustard smooth and grainy, chicken
stock, leek and chive.
Second Course:
“Mrs. White”
Black Beluga Lentil Salad Flambe
Fourme d’ Ambert cheese, organic Beluga lentils, lemon, thyme olive oil and brandy poached
pear.
Third Course:
“Mrs. Peacock”
(No not Monkey Brains!)
Chicken Normandy
Apple cider brined air line chicken breast, Granny Smith apple, yukon potato, cream, thyme,
apple cider and white wine served with oven roasted Moroccan beets, supreme citrus and
kumquat.
Fourth Course:
“Mr. Green”
Garlic and Butter Poached Pork Tenderloin.
Pork Tenderloin, baby spinach and ricotta cream, oven roasted garlic, clarified butter served
with chimmichuri roasted baby carrot.
FIfth Course:
“Miss Scarlett”
Amarene Brusche Cherry Frangipane Tart
Amarene Cherry Preserves, butter, almond, sugar served with orange creme anglaise.
Sixth Course:
“Professor Plum”
Honey Poached Plum Cranachan
Plums, whiskey, honey, steel cut oats, sugar and heavy whipping cream.
